Head Chef at Roy’s, He is also a MIXTAPE FAN and Hip Hop Head, and when He found out I was on the island and it was my bday, he went out of his way to create a VERY VERY special Menu for us to check out.
He told me he had been a fan of the mixes, played them in the kitchen, drew inspiration from them for his own craft of making gourmet food.
Here is a rundown of the dishes…
-“Kala Koa” Crudo w/fresh ahi & Japanese hamachi
-Szechwan Baby Back Ribs w/Mongolian BBQ sauce
-Crispy Calamari w/yuzu limu kohu emulsion & garlic aioli
-Japanese Misoyaki Marinated Butterfish w/sizzling bell pepper soy vinaigrette
-“Kaui Style Street Food” (Roy’s Style Hamura’s Saimin w/Kaneshiro farms pork belly dashi & quail egg,
Housemade Bao Buns w/slow braised Kaneshiro farms pork, kim chee Asian pears, fresh watercress & Korean BBQ sauce, Whole Fried Kekaha Shrimp w/smoked Hawaiian sea salt )
-Dessert Roy’s Chocolate Souffle, Pineapple Upside Down Cake & Apple Volcano all served w/Lapperts vanilla bean ice cream
